You’re going to need:
- 3 ¾ cups of corn dough
- Water
- Salt
- 1 plastic bag cut in two
Procedure:
- Mix the corn dough with a little water and salt to taste, kneading it until a smooth paste is obtained.
- Form the dough into small balls.
- Place a piece of plastic in a metal or wooden press from La Providencia, and place a ball of dough on top; cover it with another piece of the same plastic.
- Press the dough ball firmly.
- Open the press and carefully peel off the plastic.
- Spread the tortilla on a metal or clay comal, from La Providencia, over the fire and previously heated.
- Let the tortilla grill on the griddle for approximately 15 seconds. Turn the tortilla over and cook for another 30 seconds. Flip again and cook for 15 seconds more.
