A Mexican kitchen can’t go without a molcajete. It is ideal for making salsas and guacamole.
Traditional molcajetes are made of volcanic stone, if it is not cleaned before its use, then it will shed the material it is made from onto your salsa, which is not a good thing.
A molcajete can be cured in different ways: with rice and salt; with garlic; with citrus... But don't forget to wash it well. Be sure to complete any of the following procedures before using it. To clean your molcajete, follow the steps below:
How to cure a molcajete with rice and salt
Grinding a mixture of rice and salt was the recommended when we bought the molcajete in order to cure it. It was a simple and easy method.
1- Remove with a brush or a sponge the first layer of dust, grit, or debris that the molcajete may have.
2- Next, the molcajete and tejolote are rinsed in plenty of water and excess moisture is removed with a cloth.
3- Pour a tablespoon of coarse salt and another of raw rice, mash it around the entire surface of the molcajete until you get a mixture of both in a flour-like consistency.
4- Then remove all this ‘flour’ with a brush and rinse the molcajete again.
5- Let it dry in the sun and, if possible, in the open air so that the humidity disappears quickly and so that bad odors aren’t left behind.
This process should be repeated for two or three days, until the water with which you rinse the molcajete comes out crystal clear.
